The Dutch potato sector is constantly breeding, growing and selecting new varieties of potatoes.

Varieties that are even better at meeting the changing requirements of today?s consumers. It takes 10-15 years before a new variety is entirely ready for production. That means considerable financial investments on the part of the Dutch breeding centres and individual breeders.

Before a new variety is officially approved, it is extensively tested in trial fields in the Netherlands and other areas all over the world. However, a new variety must show what it is worth. Growers, packaging companies and industrial processing firms all test the new potato variety. It is only if these three segments of the potato sector, along with the retail traders and the consumers, are satisfied with the price and the quality, that the new variety stands a chance of becoming a commercial success.

The Dutch list of varieties now includes some 250 approved potato varieties. Eighty are grown as ware potatoes in the Netherlands. There is a Dutch potato to suit every taste and every menu. Dutch potatoes are also very suitable for processing into all kinds of potate products such as chips and crisps.

Cooking behaviour
When buying potatoes, consumers pay attention to the shape and size of the product, the colour of its skin, its flavour and its outward appearance, and now more frequently to its behaviour in cooking. Dutch traders offer the fresh potato market a wide range of potatoes that show different cooking behaviour, their texture after cooking ranging from waxy to very crumbly.

Each variety behaves differently in cooking. But a potato?s behaviour will also depend on the employed cultivation and storage methods, the cultivation conditions and the time of harvest. Potatoes are a natural product, not a standard industrial one. As a result, a variety?s behaviour in cooking may vary slightly throughout a season or from one season to another.
