Preparation time: 35 minutes - cooking time: 2 hours - serves 6

Ingredients: 1,200 g. shoulder and breast (or neck) of mutton, 1,200 g. potatoes, 200 g. onions, 1 sprig of thyme, 1 laurel leaf, a stalk of celery, a bunch of parsley, 750 ml. water, salt, pepper, tabasco.

Have the butcher cut the meat into pieces of equal size. Peel and wash the potatoes. Cut them into round slices of about 1/2 cm. thick. Slice the onions into rings. Make a bouquet garni of thyme, laurel, parsley and celery. Put on the oven at a moderate temperature. Alternate layers of salted and peppered meat with potatoes and onions in a cocotte. Put the bouquet garni on top. Pour in 750 ml. of water. Put the lid on the cocotte. Bring to the boil on the stove and then put immediately into the oven. Keep a steady boil and take care that the ragout does not stick. Add a little hot water if necessary. When ready, remove the bouquet garni, and transfer the stew into a deep dish. Serve with a mint sauce.

Mint sauce: mint leaves, 5 g. molasses sugar, 10 ml. vinegar, 5 ml. boiling water.
Wash and drain the mint leaves. Chop very finely and enough to fill 3 soupspoons. Put in a bowl with the molasses sugar. Pour in the boiling water. When the sugar has dissolved, pour in the vinegar and mix well. Let the mixture stand for one or two hours before serving.
