Preparation time: 1 hour - cooking time: about one hour depending on the size of the mould. - serves 6

Ingredients: 1 kg. potatoes, 350 g. butter, salt, pep­per.

Peel the potatoes and cut them into thin round slices. Wash them throroughly in cold water to take out the starch. Put them in a cloth and check that they are well‑dried.
Grease a Charlotte mould, put a piece of well greased kitchen paper on the bottom. Arrange overlapping potato slices along the sides of the mould. Fill the mould with layers of potatoes while sprinkling salt and pepper and pouring some of the melted butter on each one. Cover the mould and put it in a cool oven. Pour on the remaining melted butter at two or three intervals. After one hour take out the gratin, remove from the mould, drain off the excess butter. Take the paper off and put on a serving dish. Delicious with calfs liver.
