Potatoes in sour sauce

Saure Kartoffeln
Preparation time: 20 minutes - cooking time: 15 + 15 minutes - serves 6

Ingredients: 1 kg. potatoes, 1 1/2 l. water, 200 g. bacon, 2 soupspoons of flour, 2 soupspoons of vinegar from white wine or cider, salt.

Peel the potatoes and cut into segments of 1/2 cm. Put in cold water and cook. Drain them and see that they remain hot. Keep the liquor. Cook the finely chopped bacon until it is brown and crunchy in a saucepan with a thick bottom. Add the sieved flour and let it thicken on a moder­ate fire while stirring constantly. Pour the liquor slowly into the saucepan. Bring to the boil, stirring constantly. Pour in the vinegar. Cover and simmer for 5 minutes. Then pour the sauce onto the pota­toes.
Traditionally, all kinds of sausages are served with this potato dish.
