Tortilla de patatas
Preparation time: 5 minutes - cooking time: 20 minutes for the potatoes + 7 minutes for the omelette - serves 2 (it's easier to make several small omelettes than one big one)
Ingredients: 2 average‑sized potatoes, 3 eggs, 2 spoonfuls of olive oil, salt, pepper.
Peel, wash and slice the potatoes into thin round segments. Remove starch by rinsing the segments in cold water. Dry them well in a cloth. Heat the oil in a frying pan, then Put in the potato segments. Be careful that they don't stick together and change colour. Beat the eggs in a bowl, add salt and pepper and pour into the pan. Cook the omelette and tip it onto a serving dish without folding it.
