Preparation time: 35 minutes - cooking time: 35 minutes - serves 4

Ingredients: 3 average‑sized potatoes, 150 g. butter, 175 g. sugar, 150 g. pounded almonds, 4 eggs, one stick of chocolate.

Boil potatoes in their jacket. Peel off the jackets and rasp the potatoes. Thoroughly knead the pota­toes, butter, sugar, almonds and 3 egg yolks. Care­fully fold in the three stiffly whisked egg whites.
Line the pastry tin with tin‑foil. Grease it and fill with the pastry. Put in a cool oven for 35 minutes. Take the pastry out of the mould and cover with a chocolate mousse. Chocolate mousse: melt a stick of chocolate in butter on a very low flame. Remove from the heat and stir in an egg yolk and then the stiffly beaten egg whites.
